Chicken and Andouille Gumbo

I wrote the other day about my catfish po’boy I got in Delaware recently. The same restaurant had a delicious chicken and andouille sausage gumbo. It was wonderful – smoky and rich, packed with veggies and meat. Spicy too. Good and spicy. Spicy enough to be noticeable on the palate, even leaving a slightly tingly sensation on the tongue, but not so spicy it burns the hairs out of your nose when you exhale.
This was by far one of the best gumbos I have had in a long time. that’s right, it’s winter, so there was on okra. All filé up in this joint. I love filé. This has inspired me to make my own gumbo again. To me, that’s the hallmark of great food – making me want to replicate it at home.
