Monday Funday: Cook’s Thesaurus of Meat

If you have not checked out Cook’s Thesaurus of Meat, you owe it to yourself to take a gander. It describes a number of meats in good detail, including sausages and wild game. Let’s be honest – those two categories are mysteries to many of us. For example, can you tell a person specifically what a kishke is? What about the difference between ostrich and emu? This thesaurus is so good that it even gives recommendation for substitutions. For example, if you want to approximate olive loaf, it says you can substitute bologna or mortadella. Very useful information!
