Corned Beef for St. Patrick’s Day

It’s that time of year again. Corned beef, boiled cabbage and potatoes, and maybe some good Irish beer. It gets me back to my poor, miserable Irish roots – the Murphy family, who came over from Cork and apparently brought recipes for boiled veggies and meat, which have been passed down over the ages on packages of corned beef. And that brings us to today and to me, a wayward son of Ireland, part of the Irish diaspora, full of joy and delicious food.
